Vegan Buckwheat Apple Pancakes
Loaded with buckwheat and applesauce, my Vegan Buckwheat Apple Pancakes are just as good for you as they taste without any eggs, dairy, or added sugar!
Friends, my husband loves pancakes. Don’t get me wrong, pancakes aren’t on nearly as high of a pedestal as tomatoes are. Nonetheless, he does really enjoy them. So to say he had a lot of fun being the crowned taste tester of my Buckwheat Apple Pancakes this week is a bit of an understatement.
Then again, who can blame him. To be honest…I LOVE these pancakes. I love the nutty flavor of the buckwheat flour, the warmth of the cinnamon and nutmeg, and the juiciness of the apple. And those pretty little apple slices on top that announce to the world your cooking prowess? Bonus!
And, get this…these Vegan Buckwheat Apple Pancakes are actually healthy for you!
That’s right…These little suckers are packed with fiber, some high quality protein, and antioxidants!
Sigh. I just love a happy ending.
On top of being delicious and healthy, these pancakes are easy to make…of course!
All you need are 15 minutes of prep time followed by 15 minutes of cooking and voila! You have an impressively tasty breakfast that’s good for you!
Oh, side note…when slicing the apples for the decorative finish, you can save a lot of time by using a mandoline slicer. Also, the results will be a lot more consistent. However, do be sure to use the hand guard!
When I first got my mandoline slicer, I was so excited to use it, I completely forgot about the hand guard. There I was, halfway into eagerly creating perfectly thin slices out of the first sweet potato when tragedy struck. (Read: I got a very small cut).

Vegan Buckwheat Apple Pancakes
Equipment
- Skillet
- Mandoline slicer (optional)
- Tongs
- Mason jar rings
Ingredients
- 1 cup soy milk
- 2 tbsp lemon juice
- ¼ cup apple sauce
- 3 tbsp vegan butter melted
- ½ cup buckwheat flour
- ½ cup white flour
- 1 tsp salt
- 1 tsp baking soda
- 3 ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 red apple thinly sliced ⅛" thick
- 2 tbsp olive oil
Instructions
- In a medium sized bowl, combine the soy milk and lemon juice and allow to sit for 5 minutes. This creates vegan buttermilk and will make for moist and fluffy pancakes.
- While your vegan buttermilk is "curdling," combine the buckwheat flour, white flour, salt, baking soda, ½ tsp cinnamon, and nutmeg in a large bowl. Whisk until completely mixed.
- Add the apple sauce and melted vegan butter to the vegan buttermilk and stir to combine thoroughly.
- Add the wet buttermilk mixture into the large bowl with the dry flour mixture and mix with a wooden smooth until just combined. Do not overmix. Allow the batter to rest for 5 minutes before cooking.
- While the batter is resting, slice the apple into thin and even ⅛" slices using a knife or mandoline slicer. Add to a small bowl and sprinkle the remaining cinnamon onto the apples, stirring to distribute evenly.
- Heat a skillet on medium high heat and add the olive oil, spreading it to cover the skillet thoroughly. You can test the temperature of the skillet by dropping a small dollop of the batter onto the pan. If it starts sizzling immediately, the skillet is hot enough.
- Grease the mason jar ring then drop bottom down onto the pan using a pair of tongs. Lay 3 apple slices inside the ring. Pour ¼ cup of batter into the ring on top of the apples then remove the ring immediately using the tongs. Repeat as needed to fill up the skillet.
- When the pancakes begin to bubble on the inside and the edges are golden brown, flip them using a spatula and continue to cook 1-2 minutes on the other side.
- Remove the pancakes, cover with your favorite toppings, and enjoy!
