But of course, this bread also has a better-for-you twist, even if it’s not totally healthy.

By now, you probably know me and my dislike of white sugar. (If you don’t yet, hey)! I always take white sugar in recipes as a personal challenge to find a replacement. Remember my use of dates in my Superfood Turmeric Hot Chocolate? (Psst, if not, check it out! Deliciousness follows the link). Well, I was so happy with the results, I decided to use dates again in my Scrumptious Mocha Banana Bread.

If you are wondering how it went, I will tell you my happy dance after tasting was SLIGHTLY embarrassing.

So, yeah, it’s good. Super good. Embarrassing happy dance good.

If you want to happy dance in a way that causes your children (or husband!) to roll their eyes, bake this bread!

Ingredients

  • cup milk
  • ½ cup instant coffee I used decaf
  • 8 dates pitted
  • cup sugar
  • cup butter softened
  • 2 cups flour
  • ¾ tsp salt
  • tsp baking soda
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 2 ½ cups mashed ripe bananas about 8 medium bananas
  • 2 cups mini semi-sweet chocolate chips one 12 oz. bag

Instructions

  • Preheat the oven to 350°. Butter three 8" x 4" loaf pans.
  • Combine the milk, instant coffee, and dates in the blender. Blend on high until smooth, about 2-3 minutes.
  • Cream the butter with the milk, coffee, and dates mixture in a stand mixer with the paddle attachment on medium speed until soft and fluffy, about 1-2 minutes.
  • Whisk together the flour, salt, and baking soda in a separate bowl.
  • Add the eggs one at a time to the creamed butter mixture with the mixer on low. Add the vanilla and bananas, continuing to mix until well-blended.
  • Add the flour into the wet mixture and mix until just combined. Fold in the chocolate chips. Divide the mixture between the two buttered loaf pans and bake for 55-60 minutes, or until a toothpick inserted into the loaf comes out clean.
