Easy, satisfying, and delicious, my Chickpea Salad Wrap is vegan and healthy, making it the perfect lunch recipe for any day of the week!
Friends, I don’t know if you know this, but I really like chickpeas. Like a lot. I add them willy nilly my puff pastry pot pies, my caprese salads, and my buffalo naan pizzas, just to name a few!
I love chickpeas because they are versatile, packed with protein, and have some “heftiness” to them, which makes them a great meat substitute. Especially for white meat and fish.
And now, I have a new way to heart chickpeas!
Guys, my Chickpea “Tuna” Salad Wrap is the perfect easy weekday lunch.
It takes mere minutes to prepare but is a satisfying and delicious meal.
Plus, if you want more bonus points, you can make the Chickpea “Tuna” Salad the night before and put together the wrap in the morning! Talk about easy.
But my favorite thing about this recipe? This is one of those lunches that you spend the entire morning staring at the clock, willing it to turn to 11:30 AM for.
Yep, this is one worth waiting for. I have also been known not to wait and to instead sneak forkfuls straight from the container in the fridge. But, that’s just me…
The pickle juice is the special ingredient for me in this wrap. It brings a brininess and saltiness to the chickpeas that makes the dish absolutely craveable.
The red onions add their signature tang, and the mayonnaise brings all the flavors together into one delicious package (or wrap…)

Chickpea Salad Wrap
Ingredients
- 1 can chickpeas about 1 ½ cups
- ¼ red onion chopped
- 2 pickles finely chopped, about ⅓ cup
- ½ cup vegan mayonnaise
- 1 ½ tbsp pickle juice from the jar
- ½ tsp salt or to taste
- pepper to taste
- 4 vegetable wraps
- 2 handfuls fresh spinach
- 1 tomato thinly sliced
- 1 avocado sliced
- 2-4 slices cheddar cheese you can substitute vegan cheddar cheese
Instructions
- Add the chickpeas to a large bowl and mash with a fork until about ¼-⅓ of the chickpeas are crushed. Add the red onion, pickles, vegan mayonnaise, pickle juice, salt, and pepper. Stir to combine.
- Lay a vegetable wrap on a cutting board or plate and layer some spinach, tomato, and cheddar cheese on a straight line in the middle of the wrap. Place about ¼ of the Chickpea Salad mixture on top then add a few avocado slices. Fold the wrap together and repeat with the remaining three wraps.
