8 Minute Peanut Sesame Soba Noodles
Easy, quick, delicious, and healthy, these Peanut Sesame Soba Noodles take only 8 minutes to put together, making them a perfect lunch or quick dinner!
I know the temptation well. You spent all day working hard. It’s now dinnertime, and you look at the clock. You have 10 minutes to make dinner before the next task looms large in front of you like some kind of imaginary boogeyman. You don’t have time to make anything healthy, so you reach for the first thing you see in your pantry that is quick and easy. And usually very very unhealthy.
Well, friends, life doesn’t have to always be a struggle between easy and healthy.
Introducing… My 8 Minute Peanut Sesame Soba Noodles!
When I say this takes 8 minutes to put together, I mean it. The noodles take just a little longer than 3 minutes to cook, and you can easily make the peanut sesame sauce while they boil.
Then there are the toppings, which are very easy to prep. That’s great for me, because I think I’m about the slowest vegetable chopper on the planet.
Seriously.
If I can chop the peanuts, kale, green onion, and julienne the carrots (aided by my trusty mandoline slicer!) in about 3 minutes, so can you.
I also love that the Peanut Sesame Sauce uses pantry staples: tamari (or soy sauce), peanut butter, sesame oil, garlic, and ginger.
And that’s it.
Odds are you already have most of these ingredients lying around, just waiting to be used.
However, being simple doesn’t mean these Peanut Sesame Soba Noodles miss out on flavor complexity and deliciousness.
The creaminess of the peanut butter mixes and contrasts with the saltiness of the tamari. The sesame oil adds a depth and warmth to the flavor. Meanwhile, the award-winning duo of garlic and ginger add a bit of a zest and punch.
Side note: Soba noodles truly deserve some kind of culinary award for their service to busy people trying to be healthy. They take about 3 MINUTES to cook. Yeah, that’s right.
Now, as soon as I hear something cooks so quickly, I just assume it’s unhealthy. It’s kind of like a gut reaction. If it’s easy, there’s no way it’s good for me, amiright?! Happily, in this case, I would be wrong.
Soba noodles are made with buckwheat. This little multi-tasker is high in manganese. In fact, one cup of soba noodles contains 21% of your recommended daily intake of manganese. This means your nervous system will get a boost, as will your bone health and glucose metabolism.
But that’s not where buckwheat stops being amazing. It also contains thiamin (for energy metabolism), protein, and soluble fiber.
What soba noodles do NOT have are just as important as what they do. They are free from gluten and low in fat, making them a winner in my book.
Seriously, soba noodles are healthy AND easy. Turns out you can have it all, my friend.
Oh, don’t leave out the toppings for this one! The carrots, kale, and green onion add a fresh twist to the noodles, and the peanuts add a crunchy textural element!

8 Minute Peanut Sesame Soba Noodles
Equipment
- Food Processor (optional)
Ingredients
- 4 oz soba noodles usually about ½ package
Peanut Sesame Sauce
- ⅔ cup tamari or soy sauce
- ⅔ cup creamy peanut butter
- 1 tsp sesame oil
- ¼ inch piece of fresh ginger about ½ tsp
- 1 clove garlic
- 2 sprigs fresh parsley
Toppings
- 1 cup kale chopped and loosely packed
- 1 green onion sliced
- ½ carrot julienned
- ¼ cup peanuts roughly chopped
- 1 lime cut into wedges
Instructions
- Make the soba noodles according to the instructions on the package.
- While the soba noodles are cooking, combine all peanut sesame sauce ingredients except for the parsley in the food processor and blend until smooth and well-combined. Add the parsley and pulse a few more times. If you don't have a food processor, you can finely chop the parsley with a knife and whisk the sauce ingredients together in a large bowl.
- When the soba noodles are cooked, drain and rinse them under cold water, shaking the colander to prevent them from sticking together.
- Prep the toppings. Chop the peanuts, green onions, and kale. Julienne the carrots.
- Combine the cooked soba noodles and the peanut sesame sauce. Serve and top with desired toppings. Squeeze lime wedge over the noodles to add a hint of acidity.
